BAKED (GRILLED) RATATOUILLE
Organic ingredients recommended.
Two diced zuccini
Two diced aubergine
One package cherry tomatoes
Two purple medium onions (Spanish onions)
Two to four cloves of diced fresh garlic
One quarter cup of organic olive oil
Salt and pepper to taste (if desired hot chilli pepper, jalapeno…)
Evenly spread diced vegetables on a shallow baking dish
Mix in olive oil and spices
Bake on high at 425oF for 20-30 minutes
Can be accompanied with pasta, rice or potatoes.
